Eating: Baked Turkey Meatballs

My favorite recipe of the Spring was this super healthy turkey meatballs. It makes so many that you can use them for different things or even freeze them. Because of the fiancé, this recipe has no eggs, but with lots of veggies and no frying, it is healthy, easy, AND delicious!

Baked Turkey Meatballs

½ tablespoon garlic powder

1 teaspoon dried oregano

1 cup grated carrots

1 cup chopped onions

1 cup mixed greens

1 cup tomato sauce

1 lb ground turkey

1.5 cups bread crumbs

Pre-heat oven to 375 degrees. Combine all ingredients in a large bowl and mix it with your hands. Make golf ball size meatballs and place them on a cookie sheet with tin foil. Bake them for 40 minutes. For a crispier outside, bake them at 425 degrees for the last 10 minutes.

Makes 24 meatballs of 65 calories each.

My birthday this year fell on Memorial Day, so we had a barbecue at home to celebrate – burgers and hot dogs! One of our friends had a selfie stick and we took lots of pictures. Although it had rained for three days straight that weekend, the afternoon of my birthday was beautiful!

Now, the real treat was what the fiancé did for me the day before: he cooked a whole complete meal for me. We had shrimp scampi, salmon cakes, filet mignon with blue cheese sauce, and he took me to Twisted Fork for dessert. To end the day, I had a warm bubble bath and relaxed with a magazine and port wine.

But wait, the birthday celebration didn’t stop there. Since the weekend of my birthday the weather wasn’t good, we waited to spend a night in Tahoe to celebrate even more the week after. We started with drinks at my old job, the restaurant 19 on top of Harvey’s and then we had dinner at Edgewood, by the lake. Beautiful views and incredible food.

Another perfect holiday with the fiancé: starting with an Easter Egg hunt, church in the morning, North Lake Tahoe for brunch in the afternoon and Polish/Brazilian Easter dinner with friends in the evening.

After attending Life Church in our neighborhood, we had brunch at Lone Eagle Grille, a beautiful restaurant by the lake at the Hyatt in Incline Village. Mimosas were flowing and I was on a mission to try almost every dish they had, including my first cronut (croissant + donut)!

Then at home I cooked a Polish Easter soup that includes broth, Polish sausage, ham, cottage cheese, and eggs (the fiancé’s family recipe) and Bacalhau (my Brazilian/Portuguese cod fish dish). So great to unite both of our traditions. Our friends approved of my cooking too!

More: Oscar Party 2015

Another glam night! The fiance is getting sick of my parties: he thought that when I said I like to dress up I meant in costumes, not in fancy clothes 🙂 But we all looked so good!

I was actually able to watch all of the Best Picture nominated movies this year, plus a few extra ones, such as “Wild” and “Fifty Shades of Grey”. In the past few weeks, if I wasn’t running, I was watching a movie.

We had almost 20 people at our Oscar party and it was a blast again: good food, good drinks, good people. Neil Patrick Harris was an awesome host and this year we ended up watching most of the broadcast. Like last year, we had a red carpet and prizes for best dressed male/female and most correct picks. Good job G. who bought her dress at “Salvation Army” and F. who wore a tux!

Eating and More: Valentine’s Day at “La Vecchia”

Super romantic Valentine’s Day with the fiance: he woke me up with a dozen red roses and chocolate (the sea salt caramel chocolate candies from “Trader Joe’s”!) and I made a Brazilian breakfast for him with yogurt, toast with jam, fruit, tea, and a smoothie.

At night we celebrated with a glass of champagne at “Napa-Sonoma Grocery Company” before going to “La Vecchia” in its new location. This Italian restaurant has an amazing view of downtown. My lobster was delicious and the fiance’s salmon was perfect. At the end we talked to chef/owner Alberto Gazzola for a bit and he even shared a few secrets with us: the salmon had been done in the pizza oven! Definitely a very romantic place for a date, but the flawless food sealed the deal.

More: Antarctica Fundraiser for Big Brothers Big Sisters

As you know, I am achieving my dream of traveling to all 7 continents by the age of 30 very soon: not only I’m going to Antarctica in March, but I’m also running a marathon there. I am incredibly excited about the trip, but even more excited to have an opportunity to team up with the mentoring organization Big Brothers Big Sisters to help children in my community.

As a teacher, I see on a daily basis how adults can help shape children lives by being there for them. The Big Brothers Big Sisters program positively influences children self-confidence, provides stability, changes their perspective on life and encourages them to set higher goals. The high school graduation rate for children living in poverty in Washoe County, where I live, was 56% last year.  Recently I was pleased to learn that 75% of the age eligible “Littles” graduated last June. Since I joined Big Brothers Big Sisters, my “Littles” have also enriched my life in countless ways and I would like to keep supporting this organization.

In the spirit of my upcoming Antarctic adventure, I’d love for you to join me in making a difference in a Little’s life. Your contribution to Big Brothers Big Sisters will help provide one-to-one mentoring programs for at-risk youth in northern Nevada.

More: Wedding Planning

When we first started looking at getting married in 2015, I started going crazy: there is so much to do and it’s so expensive! But now that we are looking into 2016, I am finally able to enjoy all the wedding planning. I have been to two Bridal Fairs and several venues with the fiance. Take a look at what I have found so far: Tannenbaum on Mt. Rose, Corner Barn in Graeagle, The Grove near our house,  Wild River Grille Restaurant in Reno, Nevada Museum of Art, Cargo at Whitney Peak Hotel, The Loft at Somersett. I even took a look at a place in Napa: Wedgewood, which is by a golf course. What is it going to be?? Small wedding at a park? Big reception hall in Reno? Destination wedding in Napa? Glad I have time to decide! In the meantime, I will keep taking advantage of all the tastings 🙂

Running, Eating, and Traveling in Napa/Sonoma, California

I went to Napa and Sonoma for my friend B.’s 30th birthday and couldn’t have enjoy it more! It was a beautiful day in the 70’s to do my long run (10 miles in 2 hours). I left from the house B. was staying in Sonoma and with the help of Google Maps and I found the bike trail downtown, passing some missions, the city hall and lots of wineries.

For some wine tasting we went to Arrowood in Glenn Ellen. Our wines were paired with cheeses and spreads that complemented each other so well! Dinner was at The Girl and the Fig, one of the restaurants I had ran by earlier when I was downtown. Because of my 10 miles, I splurged on a juicy steak.

In Napa it was all about visiting my friend V. who lives there. She is an amazing cook and had made “empadão“, a Brazilian chicken pie. Amazing! Then she rode with me to Tahoe to go to M.’s baby shower, another Brazilian friend. Busy weekend of celebrations!

We hosted Super Bowl for the first time this year! The fiance made chicken wings and everybody else brought something fatty to share. The fiance’s huge TV was a hit as we could watch the game and the half-time show from anywhere in the room.

More: Antarctica Countdown

As you all know, I love to travel and have been to six of the seven continents. This March, the fiancé and I will be going on a trip to my last continent: Antarctica!

Antarctica is a huge land in the South Pole. To get there, we will be flying from the US to Argentina, and from there we will embark on a 10-day cruise. 99% of Antarctica is covered by ice: in fact, 90% of the world’s ice is there!

But, what is there to do in such a far and cold place? Each day we will explore the continent with a group: from kayaking to penguin and whale watching, there will be a lot to learn. On March 9, we will even attempt to run a marathon (26.2 miles!) on ice! I’m really excited, but also very nervous because I haven’t been training at all! The race is less than a couple of months away, so I decided to focus on training for a half-marathon instead. As the fiancé keeps telling me, we can just walk the latter half… unless we get frostbite! BTW, the marathon benefits “Oceanites“, an organization that researches the impact tourism has in Antarctica, among other things.

Check out my Antarctica Half Marathon Training. As you can see, I should have started before the New Year, but that didn’t happen, so I’m a week behind. No matter what the outcome of the race is, just achieving my goal of seeing all 7 continents by the time I’m 30 will be a huge accomplishment!
