Instead of collard greens, I had kale this week, so I added it to some spinach I also had to make spanakopita. It was actually very easy and delicious. Enjoy!

Spanakopita

1 tbsp. olive oil

1 large onion – chopped

4 cloves of garlic – minced

1 lb. spinach

1 lb kale – without stems, chopped

1 cup fresh parsley – chopped

2 cups crumbled feta cheese

2 eggs – lightly beaten

16 sheets of phyllo dough

1 stick butter – melted

 

Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until soft and lightly browned. Stir in spinach, kale and parsley, and continue to sauté until spinach is limp, about 3 minutes. Remove from heat and set aside to cool.

In a medium bowl, mix together eggs and feta. Stir in cooled spinach mixture.

Brush bottom of 9×13 pan with butter. Lay 1 sheet of phyllo dough and brush lightly with melted butter. Repeat process with 5 more sheets of phyllo. Spread half of spinach and feta mixture into pan. Layer 6 more sheets of phyllo dough, brushing each with butter. Spread the remaining half of spinach and feta mix. Layer the rest of the phyllo dough, brushing each with butter.

Bake at pre-heated 350 degree oven for 40 minutes. Cut into six pieces.

Half-Marathon Training – Week 6

This week at work we got Fitbits to track our steps. It’s been fun to try to reach the minimum of 10,000 steps a day. I basically found out that’s what I walk at any given day anyway. Sometimes before I go to bed I’m only a few steps away from my goal, so I just walk to the kitchen and back to get some water. On the weekend I even reached 20,000 steps because of my long run, which was a 6-mile one.

Not only busy life, but also weather was in the way of my runs this week. One day I had to go at night, but that wasn’t a problem because it was a beautiful full moon. Then for my long run, I had to go in the rain… At least there were some faint rainbows along the way. It even snowed here on the last day of summer! My 6-mile run was a breeze this week, but the shorter ones were killing me. I think I was just trying to go too fast, keeping the pace I used in NYC, but 9-minute miles are still out of reach for me in high altitude.

Travelling in New York City

Come on, you know I need to take a trip far away every couple of months to keep my sanity. I didn’t think I would be able to go anywhere for a while after the Australia/New Zealand super duper expensive trip, but dad came to the rescued and treated me to a weekend in NYC for my goddaughter’s baptism. I’ve been to this city probably between 10-20 times and I can’t get enough. My friend S. booked us a great hotel right in front of Penn Station so it was easy to get around. The trains to/from the airport are easy, fast, and cheap. 7th Avenue is also a walkable distance to the Brooklyn Bridge (well, if you like to walk like me…), Times Square, and Central Park.

Besides walking the Brooklyn Bridge Promenade, which I talked about on my running post earlier on (and I repeat: best views of Manhattan ever) and going to Central Park again, we also went to the National 9/11 Memorial. It was the 12th anniversary of 9/11 just a couple of days ago and I have so many ties to NYC that it was a bit emotional, but they did a really good job with the two square pools that have the name of all 3,000+ victims of the attack. Although it is free to enter, you do have to pick up a ticket at the preview site (book online to avoid an extra line). The rest of the site is still under construction, but it’s still worth to take a look. A couple of the new towers (they are building 7 total) are really pretty and impressive. Seeing them on the NYC skyline is actually healing. They fit perfectly. The 1WTC building is actually the tallest one in the Western Hemisphere at this moment.

I can’t go to NY and not see a Broadway show. One of my favorite movies is “Once”. Its song “Falling Slowly” won an Oscar a few years ago. In 2012 they made it into a Broadway musical and it even won a Tony for Best Musical of the year. It wasn’t a super production and the story is lame, but the music is awesome! It felt more like a concert than a play and the guy performer’s voice was incredible. Even my dad liked it.

On Sunday I took the train to Long Island for my goddaughter’s baptism. Not impressed with LI. Too suburban. My little goddaughter on the other hand: ADORABLE. I’m spoiling her already with clothes, jewelry and even a Bible. Maybe she can read it and tell me all about it one day.

Finally, I just had to take my dad to the Empire State Building. One of my Top 3 favorite movies is “Sleepless in Seattle” where Meg Ryan and Tom Hanks meet at the top of the Empire State Building. It is actually the only movie I can quote: “It’s like magic”, Tom Hanks saying when he describes falling in love with his late wife. I had been there a few times before, but, every time, I had to wait on a 2-hour line to get to the top. Thanks to my dad, we woke up early and made it there before 9 am. Plus, it was cloudy. The result: no lines and only a dozen people up there.

After a totally free weekend doing the three things I love the most (thanks dad and S.!) I had some money to spare, so my last stop right before my flight to Reno was at H&M for some fall shopping. Ah, what a great trip!

Eating in New York City

When I think of NYC, I think of Italian food, pizza, and cheesecake, so of course I had tons of those. My friend S. met my dad and I at an Italian Restaurant called Biricchino near 7th Avenue. I swear I’ve only had pasta once in the past six months, so I went all out in New York, while my dad had the stuffed trout. He’s doing so good eating healthy! Me, not so much this weekend… I had cheesecake for dessert every single night I was there.

I was also impressed with the cupcakes by Baked by Melissa. They are moist and tiny, which is great since I can try a bunch of different flavors this way.

Just under the Brooklyn Bridge there is a super famous place called Grimaldi’s that has always a huge line. Having enough time to spare and knowing my dad is game for anything, I decided to try it. It actually only took us 20 minutes to get a table and it was worth the wait: the sun-dried tomatoes and ricotta cheese pizza was spectacular. Once at the hotel, I looked up the pizzeria and found out there is one in Reno, and that I had been there a couple of times! Oh well, still worth the wait.

As you know, I just love the diversity of cities, especially when it comes to food, so guess what I found in NYC? Australian meat pies! I wasn’t really hungry that night, but I had to try at least their mini-pies and they were as good as the ones from my summer in Australia. We need to get a Pie Face store in Reno!

Another chain we need in town is the Europa Café. They have a great variety of breakfast items and a make-your-own-salad bar. All the calories are on the board and their cheesecake had only 400 of them :p But seriously, their salad is to die for (or was it my salad, since I created it?)

Running in New York City: Half-Marathon Training – Week 5

About 10 years ago, when I wasn’t even a runner yet, I would watch HBO’s “Sex and City” with Charlotte jogging in Central Park and think “I want to do that one day.” Then, when I became a runner my goal was to jog in Central Park just like Charlotte. This year alone, I got to do that twice!

First, my dad and I decided to go for a stroll along the Brooklyn Bridge. My idea was to jog on the bridge and meet my dad halfway, but that didn’t happen because there were so many people on the bridge it was hard to walk, let alone run. When we got to the other side, we went to the Brooklyn Bridge Park with amazing views of Manhattan. The dozens of wedding photographers agreed. Alongside the water I was able to go on my 3 mile run, and it was so perfect! The lack of altitude actually does help: I did 9 minute/miles without breaking a sweat.

The next morning I just had to go to Central Park though. It was a beautiful breezy summer day, unlike the cold spring weather I got when I was there in April. There was a race going on that weekend and the whole park was filled with runners. Without a clear path, I just ended up crashing their race and running with them. Three miles later, I had crossed the finished line 🙂 The race was an 18-mile New York City Marathon Tune-Up and the people nearing the finish line were slow and exhausted. And there I was: still looking good, cruising at a good pace, and crossing the finish line at 3:35:33. I certainly applaud those people for running for 3 hours straight. Will I ever be able to do that?

Mashed Yams

It seriously took me over 4 hours of prepping, cooking, and cleaning for lunch the other day. I am such a perfectionist I have to chop everything perfectly and then I’m such a clean freak I have to wipe down everything right away. Half of my day is spent in the kitchen these days and it wouldn’t suck so much if I didn’t have much else to do, but I still have to work 60 hours a week, train for the half-marathon, and have fun… My only consolation is that I’ve been eating super healthy lately and hopefully that will pay off in the long run.

In my organic basket this week I got some collard greens, and when I looked up online I found a traditional Brazilian recipe – Couve a Mineira. Didn’t even know collard greens were so popular in Minas, where I’m from, but I decided to try. Well, here’s the reason why I didn’t remember they existed: I don’t like collard greens. After my first taste I remembered my mom making me eat them when I was little and how bad they were. However, I already have plans to improve them next time they arrive in my basket: mix them with spinach to make spanakopita!

Oh, yeah, I was going to write about a recipe I actually liked: Mashed Yams. I’m always amazed when I look up a recipe and find out I actually have all of the ingredients. This time I had honey in my pantry because a new co-worker gave us some from his own bees. Lucky me!

2 lbs. of yams – peeled and chopped (about 5 cups)

¼ cup butter

2 tbsps. honey

½ tsp. ground cinnamon

¼  tsp. salt (or less )

 

Add the yams to a pan and cover with water. Bring to a boil over medium heat. Reduce the heat and simmer until yams are tender, for about 8-10 minutes. Drain well and return potatoes to the pan. Add the rest of the ingredients and beat at medium-low speed with an electric mixer until smooth.

Makes 5 servings of 265 calories each.

Reno/Tahoe with Dad – Part 1

Gotta love Reno/Tahoe: there is so much to do around here. Last weekend my dad and I went to the Rib Cook-Off. This weekend is was time for the Great Reno Balloon Race. We woke up at 6 am to go to Rancho San Rafael for the sunrise. There my dad marveled at the hundreds of balloons being prepped on the ground before the 7 am mass launch that filled the skies with color. Definitely a must-do in Reno.

If you live in this area, you know that after Labor Day the weather can be a hit or miss, so I’ve been trying to enjoy Lake Tahoe as much as I can. My go-to place is always Nevada Beach. The 1 mile walk from the parking lot at Kahle Drive thru the meadows gets Slick ready to enjoy the sand and it’s never crowded. My dad swam in the cold water while I caught up with friends and played with the dogs. Summer, please don’t go away yet.

Sodo – South Downtown Restaurant

After a recommendation from the receptionist at the Nevada Museum of Art, my dad and I went to Hill Street for a bite of eat at Sodo, which stands for “South Downtown”. Although from the outside I thought it would be a more casual bar/restaurant, the inside is pretty fancy and the food is pretty gourmet, with a nice wine list and some vegan and vegetarian options.

None of the entrees caught my attention, so I had a couple of appetizers instead. The spinach and strawberry balsamic scallops were regular. I think it was missing something heavier for a sauce… Or maybe I just really miss the way the last restaurant I worked at did their scallops. However, the tempura shrimp with the wasabi sauce was divine. Wanted to order a second portion, but decided to save room for dessert.

Glad I did, because the brownie was crazy good. It had a pretzel crust on the bottom and salted caramel on top. Yum! I think I even dreamt about it later that night.

Half-Marathon Training – Week 4

Smoke from the Rim Fire is finally almost all gone and the weather is back down to the 80’s, so it was a good week for training. And thank goodness for my runs. With another hectic week at work and at home, my short little runs were my safe havens. My longest run this week was a 4 mile one, which I did in less than 43 minutes around Virginia Lake. I had forgotten about this little lake near Lakeside Drive, but I’m glad I went there this week: a loop around the lake is about one mile long and the repetition is sort of a meditation, especially with the sound of the water and the geese. Amazing how exercise and nature can change my mood in a heartbeat.

I’m still getting my organic basket every week, but with my dad in town, the veggies go much quicker! This week I had some cucumbers, which is pretty much the only vegetable I don’t like, so I decided to try something different: how about roasting them in the oven? This roasted potatoes and vegetables dish is super easy because you can just add whatever vegetables you have, the cleaning is minimal because of the aluminum foil, and during the 45 minutes it takes to be ready, you can go on a 4 mile run!

2 lbs potatoes – peeled and cubed

1 cucumber – peeled and cubed

2 crookneck squashes – cubed

2 tomatoes – diced

½ onion – diced

¼ cup olive oil

1 tbsp. Italian Seasoning

Salt and Pepper

 

In a bowl, mix all the ingredients until the vegetables are coated with the olive oil and herb mix. Line a large casserole dish with aluminum foil and spread the vegetables in it. Bake at 400 degrees for 45 minutes or until tender.

Makes 4 servings of 350 calories each.
