Reno/Tahoe with Dad – Part 1

Gotta love Reno/Tahoe: there is so much to do around here. Last weekend my dad and I went to the Rib Cook-Off. This weekend is was time for the Great Reno Balloon Race. We woke up at 6 am to go to Rancho San Rafael for the sunrise. There my dad marveled at the hundreds of balloons being prepped on the ground before the 7 am mass launch that filled the skies with color. Definitely a must-do in Reno.

If you live in this area, you know that after Labor Day the weather can be a hit or miss, so I’ve been trying to enjoy Lake Tahoe as much as I can. My go-to place is always Nevada Beach. The 1 mile walk from the parking lot at Kahle Drive thru the meadows gets Slick ready to enjoy the sand and it’s never crowded. My dad swam in the cold water while I caught up with friends and played with the dogs. Summer, please don’t go away yet.

Sodo – South Downtown Restaurant

After a recommendation from the receptionist at the Nevada Museum of Art, my dad and I went to Hill Street for a bite of eat at Sodo, which stands for “South Downtown”. Although from the outside I thought it would be a more casual bar/restaurant, the inside is pretty fancy and the food is pretty gourmet, with a nice wine list and some vegan and vegetarian options.

None of the entrees caught my attention, so I had a couple of appetizers instead. The spinach and strawberry balsamic scallops were regular. I think it was missing something heavier for a sauce… Or maybe I just really miss the way the last restaurant I worked at did their scallops. However, the tempura shrimp with the wasabi sauce was divine. Wanted to order a second portion, but decided to save room for dessert.

Glad I did, because the brownie was crazy good. It had a pretzel crust on the bottom and salted caramel on top. Yum! I think I even dreamt about it later that night.

Half-Marathon Training – Week 4

Smoke from the Rim Fire is finally almost all gone and the weather is back down to the 80’s, so it was a good week for training. And thank goodness for my runs. With another hectic week at work and at home, my short little runs were my safe havens. My longest run this week was a 4 mile one, which I did in less than 43 minutes around Virginia Lake. I had forgotten about this little lake near Lakeside Drive, but I’m glad I went there this week: a loop around the lake is about one mile long and the repetition is sort of a meditation, especially with the sound of the water and the geese. Amazing how exercise and nature can change my mood in a heartbeat.

I’m still getting my organic basket every week, but with my dad in town, the veggies go much quicker! This week I had some cucumbers, which is pretty much the only vegetable I don’t like, so I decided to try something different: how about roasting them in the oven? This roasted potatoes and vegetables dish is super easy because you can just add whatever vegetables you have, the cleaning is minimal because of the aluminum foil, and during the 45 minutes it takes to be ready, you can go on a 4 mile run!

2 lbs potatoes – peeled and cubed

1 cucumber – peeled and cubed

2 crookneck squashes – cubed

2 tomatoes – diced

½ onion – diced

¼ cup olive oil

1 tbsp. Italian Seasoning

Salt and Pepper

 

In a bowl, mix all the ingredients until the vegetables are coated with the olive oil and herb mix. Line a large casserole dish with aluminum foil and spread the vegetables in it. Bake at 400 degrees for 45 minutes or until tender.

Makes 4 servings of 350 calories each.

Half-Marathon Training – Week 3

I just had the busiest 10 days ever: planned 8 new classes for work,  went to a baseball game, a rib cook off festival, two concerts, a play, plus cooked and took care of my dad who is staying with me for a couple of months. It takes a lot of time management, but to make it all work you need to have priorities, and my training schedule is one of my top priorities for the next couple of months (well, besides my dad, and work, and my friends, and eating healthy, and sleeping well… Argh, I’ll try not to go crazy.) Thank goodness this week all the runs were still only 3 miles long. How am I going to find time for the 10 mile runs in a few weeks??

My host sister K. in Reno/Tahoe

I get super excited when someone comes to visit me. Mainly because I love stay-cations and Reno/Tahoe is the best place for it, especially now that I have a beautiful house. The day I came back from New Zealand, my host sister K. from Minnesota arrived to see me, so she said she would understand if I was tired from my trip and didn’t wanna do much. Does she really not know me??

In Reno we walked around the neighborhood for a couple of hours (she got blisters, oops…) and being the nature lover she is, she taught me the name of the birds and plants in the area, so it was like I was a tourist in my own backyard. I took her to dinner at one of my favorite restaurants in Reno, Grateful Gardens, and was ready to show her downtown and Hot August Nights, but I guess being a good host means I have to follow my guest’s pace, so we chilled at home with a movie instead.

We also went on a hike up Mt. Rose, but only to the waterfall, which takes about 45 minutes. From there, she saw Lake Tahoe for the first time, and I just loved her enthusiasm! Last year, when my brother’s girlfriend saw the lake for the first time, she said “I’ve seen more impressive things…”, so it was delightful to see someone as excited as me about this place.

The next day it was a trip around the lake, with stops in Tahoe City, Emerald Bay, Camp Richardson for lunch at The Beacon, and Nevada Beach for a walk to the lake with Slick. Seriously, Lake Tahoe is the most beautiful place on earth. And I just came back from New Zealand.

Half-Marathon Training – Week 2

This week the runs were still short: only 2-3 miles a day. The problem is that we’ve been having really bad air quality for the past week because of the Rim Fire near Yosemite. We’re getting a lot of smoke and there are days my eyes are so irritated I can’t even drive straight. So even though I hate treadmills, I had to do my Saturday long run at a gym. At least I got to push myself and finished the run in less than 29 minutes. Can’t wait for this smoke to go away! Although a sunset and some smoke is a pretty stunning combination…

Palha Italiana – Brazilian Graham Cracker Cookie Bar

This week my Brazilian friend V. invited me to her place to learn to make “coxinha de galinha”, an appetizer from Brazil. I don’t miss many things from my home country since my mom sends me the mixture to make “pao de queijo” every month, but after she mentioned “coxinha”, my mouth started to water. It’s a fried dough stuffed with shredded chicken found everywhere in Brazil. We eat it in parties, at home, as an appetizer, as a snack, anytime, anywhere.

I thought she had made “coxinha” many times before, but when I arrived she was watching a YouTube video to learn how to make it. Instead of following the recipe step-by-step like I would, she shut off her computer and started to make it by scratch. It was quite funny for her to hear me ask questions like “how to you mince garlic?” or “what does kneading mean?”, but people don’t believe me when I say I don’t know how to cook until they see me ask stupid cooking questions like that. I didn’t really learn how to make “coxinha” that day. I’m yet to master the whole cooking by scratch thing. However, I’m really good at eating. They were huge appetizers, but I ate two at her house, then two while driving back home, and two more when I got home. I’m sorry, but all you guys who are gluten free, healthy eaters, don’t know what you’re missing. Indulging in some fried dough once in a while is what life is all about!

So what does “coxinha” have to do with “palha italiana”? Well, nothing, except that after eating some Brazilian food, I started craving more! While at work today, someone told the new staff that I make pretty good desserts, so that was my cue to make something at home. “Palha italiana” is one of those things that remind me of my childhood, then of middle school, and then of even college, because it is also a snack/dessert I could find anytime, anywhere in Brazil.

Palha Italiana – Brazilian Graham Cracker Cookie Bar

1 can condensed milk
3 tbsp. chocolate power
2 tbsp. butter
8 sheets of Graham crackers

In a bowl, crumble the Graham Crackers (in Brazil, “biscoito Maizena”). Reserve.
In a pan, mix the condensed milk, the chocolate powder, and the butter. Stir in low heat for 10-15 minutes or until mixture gets a little thicker.
Add the Graham cracker crumbles and mix it all together.
Pour the mixture into a 9×9 pan and let it cool. Cut it into 9 squares.

Calories: 275 per square

Half-Marathon Training – Week 1

I signed up for the Rock-N-Roll Las Vegas Marathon on November 17th 2013, but let’s be real, it is August 17th today and I haven’t started training. Three months is just not enough time to train for a marathon (18-20 weeks would be ideal…), and since my dad will be living with me for the next three months as well, I just didn’t think it was fair to him if I was living and breathing marathon training while he’s visiting me, so I decided to adjust my goal and train for a Half-Marathon instead.

I am following a 14-week plan from the magazine “Women’s Running”. When I first looked at it, it just seemed too easy: this week I was just supposed to run 3 miles and walk for about 2 miles the rest of the days, but as the week developed, I learned that was just what I needed. After 10 weeks of vacation, it was hard to get back to work. I was so tired I could barely move, but I did walk to the beach in Tahoe after work a couple of times and today I ran my 3.25 miles in 35 minutes. It felt so good! But 3 miles was enough as my legs started to hurt. I think I’ll stick to this 14-week plan for the Half-Marathon and leave the marathon training for next year when I’m turning the big 3-0.

Christchurch, New Zealand

Between 2010 and 2012 Christchurch had several huge earthquakes that destroyed the whole city center. They are still rebuilding it, but most of the city is just a bunch of parking lots and construction sites. The Re:Start area is full of shipping containers transformed into stores, bringing a little bit of life to the area.

I walked thru the botanical gardens (I love that NZ is full of them!) and went to the Canterbury Museum, but the best attraction in town is the Antarctic Centre, which was the perfect way to end my trip to New Zealand.

Christchurch is the main hub for those going to Antarctica and the museum has plenty of information about the continent. They have little penguins swimming around and a room where you can experience below 0 temperatures and a wind storm. Pretty cool, especially when that’s the only continent I still have to go to. Now I feel a little closer to completing my 7-continent list.
